Job Summary:
We are seeking an experienced, hands-on Back of House (BOH) Manager to fully lead our kitchen operations. You will oversee all heart-of-house staff, including line cooks, prep cooks, and dishwashers. The ideal candidate is a natural leader who balances business logistics (inventory, food cost, scheduling) with true culinary execution-someone who can keep a cool head during high-volume island rushes and isn't afraid to step onto the line to support the team when needed.
Responsibilities:
- Team Leadership: Recruit, hire, train, schedule, and supervise all BOH employees. Foster a positive, respectful, and hard-working kitchen culture.
- Daily Operations: Oversee daily prep lists and line execution to ensure consistency in food quality, strict recipe compliance, and fast ticket times during heavy lunch and dinner rushes.
- Inventory & Ordering: Manage ordering and inventory control for fresh local fish, seafood, produce, and dry goods. Maintain strong vendor relationships and manage food costs to meet budget goals.
- Kitchen Sanitation: Maintain top-tier health department standards. Ensure all walk-ins, prep areas, line stations, and dish pits are kept exceptionally clean, organized, and safe.
- Collaboration: Partner closely with the General Manager to streamline kitchen efficiency, manage BOH labor costs, and handle seasonal volume shifts smoothly.
Qualifications & Skills:
- Experience: 3+ years of kitchen management, BOH management, or strong lead line cook experience in a high-volume, casual or upscale-casual restaurant environment.
- Skills: Strong background in fresh seafood handling and prep, hot line mechanics, and kitchen logistics.
- Management Tools: Proficient with inventory tracking, food cost math, and building efficient staff schedules.
- Pace: Exceptional leadership skills with the ability to motivate a team and pivot quickly under high-volume pressure.
- Schedule: Full-time availability, including nights, weekends, and holidays.
- Certifications: Valid ServSafe Manager certification required (or ability to obtain within 30 days).
