Job Description

Cocktail Program Manager

Under the supervision of the General Manager, fine dining Italian concept, the incumbent is primarily responsible for the concept and creation of the cocktail program in the property's restaurants and bars, including menus, cost of sale, recipes and training. Incumbent is also responsible to manage bar and lounge areas, ensure a guest atmosphere that is pleasant, enjoyable and fun, ensure consistency of service through the implementation of policy and procedure, training and certification, recognition and discipline of all evening bar staff members. Responsible for safe and responsible service at all times in bar and lounge. Daily responsibilities include but are not limited to scheduling of team, facility maintenance, preparation for events and private parties, interviewing and hiring, holding team members accountable for job duties, opening and closing the venue, ensuring the health and safety standards are met.

Essential Job Functions:

  • Must adhere to Seminole Tribe's Policies and Procedures.
  • Conducts themselves in accordance with all Gaming Commission Regulations, and Seminole Tribe of Florida/departmental policies and procedures.
  • Responsible for the concept and creation of the cocktail program including menus, cost of sale, recipes and training.
  • Design and implement training standard operating procedures for bar staff and cocktail development.
  • Will regularly audit and test to ensure compliance and consistency of cocktail program.
  • Ensures proper drink preparation and adequate inventory for area of responsibility.
  • MOD on the shift acting as key liaison between the division and the casino and hotel operations.
  • Maintains compliance with established staffing and cost budgets.
  • Coordinates employee staffing and work schedules.
  • Develop department members' knowledge and skills through education, training, coaching, corrective counseling, etc.
  • Stays abreast of the current trends and practices within area of responsibility and communicates pertinent information to management, peers, direct reports and team members as appropriate.
  • Responsible for the proper planning and operation of all beverage functions.
  • Gathers/tracks vital guest relevant feedback on beverage offerings used to substantiate suggested changes and enhancements regarding both product and services offered.
  • Spearheads the continued emphasis on productivity through the audit of weekly schedules and the establishment of a realistic zero based staffing guide.
  • Implements and monitors beverage control system, making revisions when necessary.
  • Assists in the responsibility of organizing and operating beverage outlets in accordance with approved standards, budgetary limitations, policies and procedures.
  • Assists in the development and implementation of the Beverage department yearly budgets, capitol FF&E's and capital projects.
  • Directs and oversees the day-to-day activities of all beverage outlets.
  • Oversees hiring, training, interviewing, evaluations and supervision of all direct assigned personnel.
  • Promotes positive public/employee relations at all times.
  • Maintains a clean, safe, hazard-free work environment within area of responsibility.
  • Demonstrate a commitment to ensuring responsible gaming and responsible alcohol service by discreetly notifying appropriate management of concerns and observations.
  • Knowledge of Seminole Hard Rock Hotel & Casino's policies, procedures and operations.
  • Conduct personal behavior and select, train, coach, counsel, appraise and retain direct reports who consistently perform actions and behaviors that reinforce the Company's Mission and Values of Communication, Integrity, Fun, Respect, Accountability, Passion and Dedication.
  • Demonstrate commitment to assisting in the development of Seminole Tribe members participating in the Tribal Career Development program and, when a Seminole Tribe member's assignment falls within your direct area of responsibility, act as a personal mentor/career advisor to the Tribe Member and submit progress reports and information to the Director of Tribal Development.
  • Ensure prompt and discreet notification to appropriate management and/or the Ethics Hotline of any observation of illegal acts or internal ethics violations.
  • Performs all other related and compatible duties as assigned.

Qualifications:

  • Associates degree is required along with a minimum of 6 years in high volume bartending and/or mixology venue or an equivalent combination of education and/or work experience.
  • Alcohol safety certification and Sanitation certification is preferred.
  • Membership in United States Bartender's Guild preferred.
  • Experience in mixology, wine service, knowledge of craft beer, boutique liquor and artisanal spirits required.
  • Ability to work flexible schedules, including nights, weekends and holidays is required.
  • Outstanding interpersonal and guest service skills.
  • Ability to lead and mentor a team.
  • Must present an image of excitement, enthusiasm, and outgoing personality, while being able to project a professional appearance.
  • Proven track record, business management, purchasing and record keeping.
  • Ability to read and understand all Seminole Tribe of Florida policies and procedures.
  • Must be able to multi-task to achieve results with hourly team members and other departments.
  • Must be able to communicate effectively with guests in English, specific to position duties and responsibilities.
  • Must be able to complete standard Seminole Tribe of Florida forms and reports.
  • Must have strong interpersonal and leadership skills and ability to sustain positive work environment with a diversified talent.
  • Must possess refined speaking and listening skills.
  • Ability to interact with a diverse team of individuals.
  • Superior organizational and time management skills.
  • Must possess basic mathematical skills to include ability to add, subtract, multiply and divide specific to position responsibilities.
  • Must have ability to balance cash drawer at end of shift.
  • Must exercise sound judgment in all aspects of position.
  • Knowledge or acquired knowledge of computer and software applications, proficient in Excel and Word.
  • Commitment to routinely go above and beyond in the accomplishment of position responsibilities in an effort to play a role in the achievement of organizational goals.

Work Environment:

  • The work environment characteristics described here are representative of those an employee encounters while performing the duties and responsibilities of this position.
  • Environment is that of a restaurant/lounge that is fast-paced and guest services oriented. It is sometimes loud/noisy, and crowded.
  • Prolonged periods of standing/walking.
