- Prepare and execute authentic Jamaican dishes including jerk chicken, oxtail, curry goat, rice and peas, and other traditional menu items
- Oversee daily kitchen operations, ensuring food quality, consistency, and presentation standards are met
- Manage kitchen staff, including scheduling, training, and performance oversight
- Monitor food inventory, place orders, and manage food cost controls to minimize waste
- Ensure full compliance with food safety, sanitation, and health code regulations
- Collaborate with ownership on menu development, specials, and seasonal offerings
- Maintain kitchen equipment and coordinate maintenance or repairs as needed
- Proven experience preparing authentic Jamaican cuisine in a professional kitchen setting
- Prior kitchen management or lead cook experience required
- Strong knowledge of Caribbean spices, cooking techniques, and traditional recipes
- ServSafe certification or equivalent food handler certification (or ability to obtain)
- Ability to manage, motivate, and lead a kitchen team in a fast-paced environment
- Solid understanding of food cost management, inventory control, and ordering
- Reliable, organized, and passionate about delivering an exceptional dining experience
